- Salute to Agriculture [Supplement to the Island Farmer] There are seven major egg producers on Prince Edward Island and they produce the vast majority of eggs in the large supermarkets on PEI. Mr. John Dennis who operates a mixed egg and dairy farm since 2001 has 10,000 laying hens and produces upwards of 3 million eggs per year. Animal welfare is a major concern for egg producers as well as increasing operational costs but Mr. Dennis indicated that established egg producers are making a comfortable living.
