Abstract
Salute to Agriculture [special supplement] Archie Dunbar and Mar Arsenault work three weeks each year making maple syrup at Sugar Bush, Woodstock, PEI. The Sugar Bush has 250 maple syrup trees, but Dunbar is only tapping twenty trees currently, as he has been minimizing production in recent years. Dunbar notes that the best weather for maple syrup is usually a the beginning of April, and that cold nights below freezing, with warm days that measure at least five degrees, create the best conditions for maple sugaring.
