[Saltscapes Good Taste: Gracious Living on the East Coast, Summer 2014, supplement] Chef Alain Bossé speculates on possible recipes that may have been served by caterer John Murphy of the North American Hotel (Charlottetown) during the 1864 Charlottetown Conference public ball; although the types of foods generally served during that time period are known, no documents have been found that could lead to actual recipes for the dishes served
